The story

Slightly stale, thick-cut bread is the trick here. It drinks in the custard without falling apart and browns beautifully in a buttered skillet.
Make it

Method

Make the custard

  1. Whisk the eggs, milk, and cinnamon together in a medium bowl until evenly blended. Mix in the orange zest and triple sec if using.

    About 3 min
  2. Pour the custard into a shallow dish wide enough to hold one slice of bread.

    About 1 min

Soak the bread

  1. Place each slice in the custard and let it absorb some of the mixture on both sides. Lift it out and let the excess drip back into the dish.

    About 4 min

Cook

  1. Melt a little butter in a large skillet over medium heat. Add the soaked bread without crowding the pan.

    About 2 min
  2. Cook until the underside is deep golden brown, then flip and brown the second side. Add more butter to the skillet as needed and repeat with the remaining bread.

    About 12 min

Serve

  1. Serve the French toast hot with butter, maple syrup, and fresh berries if desired.
